Authorizations and Licenses

You will need to be in possession of the following licenses and permits in order to operate a food truck in California in accordance with the law:

Businesses in the state of California are required to obtain a valid business license before they may lawfully conduct operations in any specific city. It is possible that a yearly fee and/or a percentage of sales will be required for this. If you have workers working for you, you will also be required to get an Employer Identification Number (EIN).

Your truck, like any other type of vehicle, will require that you have a valid driver's license. A commercial driver's license may or may not be required of you depending on the circumstances.
Permit to handle food: In certain regions, you may be required to obtain a permit to handle food and/or complete a food safety training course. When your food truck is open for business, there must always be someone in possession of this type of permission.
CA reseller permit/seller permit: In order to sell any kind of food, you will need to obtain either a seller permit, which is required if you are selling your own goods, or a reseller permit, which is required if you are selling the pre-made goods of someone else.
Your permit from the health department: The department of public health in your community will conduct health inspections of your food truck at regular intervals. This permit is required in order to ensure that the local authorities will inspect your truck for cleanliness and food safety on a regular basis.

Before you start your own food truck business, there are a few prerequisites and restrictions you need to be aware of, including the following:

The food that you intend to offer must first receive permission from the local health department. You won't be able to sell any of the goods on your menu if your kitchen isn't equipped to properly and safely make those items.
Just like any other type of vehicle, food trucks are required to respect all of the local rules and posted traffic signs.
You have a responsibility to properly dispose of waste within and around your truck, and you must also provide a trash container that is easily accessible and bears information advising customers to use it.
During the whole time that you are working, you are responsible for keeping any necessary permits within easy reach.
