3 glasses whole milk
3 tablespoons of demerara sugar or granulated sugar, 6 ounces of coarsely chopped semisweet chocolate, ideally Scharffen Berger,
Whipping cream with a tiny bit of sugar (for serving)

Procedure: In a medium saucepan over medium-high heat, bring 34 cup water to a simmer. Add milk and bring back to a simmer after whisking in 3 Tbsp. cocoa powder to ensure there are no lumps. Cook mixture, whisking often, until smooth and creamy and chocolate is melted, about 5 minutes. Whisk in chocolate and sugar.
